La Nouvelle Don(n)e, “The New Deal”, is a micro-domain with a reputation that far exceeds its physical size of 5 ha. The estate was created in 2007 on the highest point of a plateau in one of the most beautiful areas, with the richest and most diverse wildlife, in the South of France: the Calce (Pyrénées Orientales). Saved from in extremis grubbing by the young winemaker, Wilfried Valat, the vineyard was reborn as two islands, Clos de l’Olby and Le Close du Mas, installed on the slopes of the Tet Valley. Born in Montpellier, Wilfried studied biochemistry in Montpellier and oenology in Dijon. The Burgundian precision in winemaking was imprinted in him from the time he spent working at Domaine Méo-Camuzet in Vosne-Romanée, and Domaine Joblot Givry in Cote Chalonnaise. From day one, Wilfried was committed to the specifications of organic farming and received his certification in 2010. His meticulous attention comes through in the wines brimming with freshness, balance and elegance.
